How to Make Braised Pork with Eggs

1. Prepare the Pork

To eliminate any odor and clean the pork, soak it in warm water mixed with a little salt and lemon juice for about 30 minutes. After that, rinse the pork thoroughly, scrape off any skin, and rinse it again. Allow the pork to dry before cooking.

2. Prepare the Seasonings

Chop the white onion, garlic, and chili into small pieces. Squeeze about 4 tablespoons of lemon juice. These ingredients will help create the unique flavor for the braised pork with eggs.

3. Marinate the Pork

Place the pork in a large bowl and marinate it with a mixture of onion-garlic-chili juice, sugar, seasoning powder, salt, fish sauce, caramel color, and ground pepper. Mix well and let it marinate for about 2 hours so the flavors can soak into the meat. If you have extra time, you can cover the pork and refrigerate it, or let it sit in the sun for better flavor absorption.

4. Sear the Pork

Đun nóng một ít dầu trong chảo, sau đó cho tỏi băm vào phi thơm. Tiếp theo, cho thịt vào chảo và áp chảo cho thịt săn lại, giúp thịt giữ được độ ngọt và mềm mại.

5. Prepare the Broth

Boil about 1.3 liters of water in a pot, then add the seared pork along with the marinade. Add the white onion, sugar, salt, caramel color, and fish sauce. Bring it to a boil over high heat, then skim off any foam to keep the broth clear.

6. Braise the Pork

Once the broth is boiling, lower the heat and simmer for about 45 minutes (do not cover the pot to prevent the broth from becoming cloudy). When the pork is tender, remove the onion and add the boiled eggs to the pot along with some fish sauce and Mirin. Let it simmer for another 15 minutes for the eggs to absorb the flavor.

Tips for Making Tender and Delicious Braised Pork with Eggs

  • If using frozen pork, blanch it in boiling water with a pinch of salt to remove any odor and enhance the meat’s taste.
  • Searing the pork before braising helps it absorb the seasonings better and enhances the overall flavor.
