Manufacturing Process
Using the shikomi technique, glutinous rice and food-grade alcohol are combined with koji (made from rice) to create moromi (the fermentation mixture), which is kept in large stainless steel tanks. After a long period of fermentation, this mixture is pressed and filtered to obtain Mirin.
